There is no tolerable daily intake for benzo[a]pyrene, because for a genotoxic carcinogen no threshold can be assumed. The margin of exposure says how much room there is rather than whether a line has been crossed — which is a deliberately different kind of number.

No safe level, so no safe limit

Benzo[a]pyrene is a polycyclic aromatic hydrocarbon formed whenever organic material burns incompletely — charred meat, smoked fish, engine exhaust, tobacco smoke. It is genotoxic as well as carcinogenic, and for a genotoxic carcinogen no threshold can be assumed. That is why regulators do not publish a tolerable daily intake for it, the way they do for mercury.

Margin of exposure instead

EFSA divides the benchmark dose from animal studies by the estimated human intake and looks at the ratio. Above 10,000 is treated as a low concern for public health; below it warrants attention. It is a deliberately different kind of number from a limit — it says how much room there is rather than whether a line has been crossed.

The advice is dull and effective

Keep the food away from direct flame, do not eat the blackened parts, and grill beside the heat rather than over it. Typical European dietary exposure sits comfortably in the low-concern range; heavy consumption of char-grilled meat does not. Tobacco smoke delivers far more than food ever does, which is worth keeping in proportion.

How much to trust a footprint

Life-cycle figures for the same product routinely differ by a factor of two between studies, because deciding what to count — the farm, the packaging, the shop, the drive home, the disposal — is a methodological choice rather than a measurement. The numbers here are central estimates from published meta-analyses. They are reliable for comparing one option against another, which is what people actually use them for, and not reliable to the second significant figure.

The other thing worth keeping in view is scale. Individual choices matter and they are not where the emissions are: the difference between the best and worst quartile of beef producers is larger than most people's entire dietary footprint, and that is a question about agriculture policy rather than about shopping.
